INGREDIENTS
3 large beets
4 ounces creamy feta cheese (such as French or Australian Feta)
Juice of half a lemon
Sea salt & white pepper to taste
Extra virgin olive oil for drizzling
For serving
Assortment of fresh raw and blanched seasonal vegetables such as purple
carrots, cauliflower, baby radish, endive, and asparagus
DIRECTIONS
Simmer beets in water for about 40 minutes until tender. Allow to cool, remove
skin and puree in food processor until smooth. Mix goat cheese with about 2/3 of
the beet puree. Add lemon juice, garlic paste, salt and pepper. Drizzle in about 2
teaspoons of olive oil.
Serve dip with fresh and blanched veggies.
